Recipe | Chinese Cucumber Salad

You can generally find this side dish at any dumpling restaurant, think Din Tai Fung type establishments, or similar but smaller mom and pop dumpling spots. This dish looks simple but the flavor packs a punch. It provides a refreshing bite in between your heavier entrees. This will go well with any noodle, rice or dumpling dish you choose to eat.

Cucumber Sauce Ingredients

  • 2 tablespoons low sodium soy sauce

  • 2 tablespoons dark Chinese vinegar

  • 1 tablespoon chili hot sauce (something like Sambal Oelek would work)

  • 1 tablespoon agave or choice of sweetener

  • 1 teaspoon sesame oil

  • 2-3 cloves garlic, minced

Cucumber Salad Ingredients

  • 10 cocktail or Persian cucumbers

instructions

  1. In a bowl, mix the cucumber sauce ingredients together until well combined and set aside.

  2. Cut the cocktail or Persian cucumbers into 1 to 1.5 inch thick pieces.

  3. Place cucumbers into a large bowl.

  4. Pour cucumber sauce in with the cucumbers.

  5. Toss and mix well.

  6. Serve immediately.
